Lammershoek’s farming legacy is perpetuated in the seasonal pulse of nature and its ever-renewing life. In the vibrant new vineyard shoots of spring, in green landscapes framed by rocky mountain ridges, in the seasonal harvests and their characteristics and qualities.
Farmed dry-land, thus not irrigated. All grapes used are from our vineyards. The Chenin vines are roughly 50-year-old bush vines. The Viognier, and Sauvignon Blanc are also on varying degrees of decomposed granite but on opposite slopes of the valley thus different ripening patterns are observed and there is more to play with in the cellar.
Each component of the blend was kept separate during the winemaking process. After ageing the wines for 7 months in old French oak barrels, wooden foudres, Stainless Steel and concrete tanks the final blend was made and bottled.
