Cantine Paolini was founded in 1964 by Gaspare Baiata and several like-minded, forward-looking growers. Thanks to the Sicilian maritime climate and the winds sweeping off the sea through their vines, they have been able to maintain an environmentally friendly approach.

Nerello Mascalese is a thin-skinned grape variety. It produces translucent reds that are rarely heavier than medium-bodied and is most famous for its association with the Rossos of Mount Etna. This interpretation of the grape comes from further inland and is fruitier than the stony, smoky, mineral wines from the volcano itself, but it does show some of Nerello’s daring sour cherry acidity allied to a really joyful burst of juicy red berries and a hint of earthiness.

Pairs wonderfully with oily fish like sardines, tuna, and swordfish, as well as sausages, meatloaf, and meatballs
